Corriander Chutney

Corriander Chutney:

Serves: 2
Preperation Time: 10 min

Ingredients:

Corriander Leaves - 1
Chopped Green Chilies - 1
Chopped Onion - 1/4
Chopped Ginger - very little

Shredded Coconut - 1/2 tsp
Salt - upon necessary
Sugar - upon necessary
Lemon Juice - 1/2 tsp
Water - few drops

Method:

Grind all the above in a blender for like 5-6 min continuously and try to taste in between so that we know the salt and sugar are enough accordingly.

Anyone can try this chutney with any Indian breakfast like idli,uttapam e.t.c., or even with rice which is simply delicious.

If this chutney remains always keep it in the refrigerator so that you can use later as it stays atleast for a week.

Bruschetta

Bruschetta:
Serves: 4
Preperation Time: 20 min
Ingredients:
Baguette French bread - 1 bag
Pesto Sauce - upon necessary
Tomatoes - 1
Shredded Cheese - upon necessary

Method:
First take oven based pan and place all the baguette french bread on top of it.

Now add the pesto sauce on top of the bread just like applying jam to the bread and then chop the tomatoes in smaller peices and then place on top of these.

Finally decorate the shredded cheese on top of it (I bought Cheddar and Jalapeno shredded cheese!!!) of your choice.

And then place the pan in the oven for like 10 min at 350 degree F which means until cheese melts completely.
Now try eating it when its hot like a snack esp...evening time:-)

Baba Ghanoush

Baba Ghanoush:
Serves:Preparation Time: 1hr 30 min Ingredients:
Egg plant - 1
Red chillies - 4
Salt - 1 tsp
Tahini ( sesame seeds sauce) - 2 tsp
Garlic cloves - 1
Cumin seeds - 1/2 tsp
Oilve oil - 4 tsp
Lemon juice - 3 tsp

Method:

First cut the eggplant in to 2 or 4 halves and then place it in the oven for an hour at 350 degree F in an oven bowl.After this,give some time to cool down for like 10 min.

Now peal the upper layer of the eggplant and place the inner part of eggplant in a bowl.

Finally,grind all the above ingredients such as inner part fo eggplant,red chillies,salt,tahini( sesame seeds sauce),garlic cloves,oilve oil and lemon juice until it becomes like a paste.

Atlast,heat 1 tsp of olive oil in a pan and fry the cumin seeds for like 20 seconds and then add this on the top of the paste after grinding is done perfectly.

Now start eating with either pita or toasted bread.I tried with toasted bread by applying the above paste like a jam.Really amazing dish !!!

Little Gourd Fry

Little Gourd Fry:
Serves: 4
Preperation Time: 45 Minutes

Ingredients:

Little Gourd - few(2 times handful of little gourds)
Oil - 5 tsp
Groundnuts - few
Onions - 1
Green Chillies - few
Cumin Seeds - 1/2 tsp
Mustard - 1/2 tsp
Urad Dal - 1/2 tsp
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Grated Paneer - 2 diced
Shredded Coconut - 1 tsp
Salt -1 tsp
Daniya Powder - 1/2 tsp
Masala Powder - 1/2 tsp
Cilantro - upon necessary

Method:

First cut the little gourd vertically one in four halves and then place all these separately in a big bowl.

Fry the groundnuts in oil for few minutes till they are slightly brown and then put these in a separate container.

Now take another pan and then add oil to it and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

Now add chopped little gourd in to the pan and mix well for a while until it cooks well.And then add the fried groundnuts to it and continue mixing well for another 5-8 minutes.

Accordingly now add Salt,Daniya powder,grated Paneer, Masala Powder and Shredded Coconut to it on top of it and the mix well for a while and then taste it till everything is perfectly enough...

Finally decorate the little gourd fry with cilantro...&&& then try it with chapathi / Rice...Its nicee !!!

Eggplant Curry

Eggplant Curry:
Serves: 4
Preperation Time: 30 Minutes

Ingredients:

Chopped Eggplant - 1
Chopped Onions - 1
Green Chillies - 5
Corrainder Leaves - few
Cumin Seeds - 1/2 tsp
Mustard - 1/2 tsp
Urad Dal - 1/2 tsp
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Grated Paneer - 2 diced
Shredded Coconut - 1 tsp
Salt -1/2 tsp

Method:

Initially wash the chopped eggplant( cut like French fries) in salted water for couple of minutes and then drain the water completely and then put it aside in a container.

Add oil in the pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

Now add Salt,Daniya powder,grated Paneer and Shredded Coconut to it on top of it and the mix well for a while and then taste it till everything is perfectly enough...

Finally decorate the curry with corriander leaves...&&& then try it with chapathi / Rice...Its nicee !!!

Cabbage Pakoda

Cabbage Pakoda:

Serves: 4
Preperation Time: 30 Minutes

Ingredients:

Cabbage - 1 small
Onions chopped - 1
Cumin seeds - 1 tsp
Red chilli powder - 2 tsp
Salt - 1 tsp
Corriander leaves - few
Curry leaves - few
Besan - 4 tsp
Rice flour - 1 tsp
Oil - upon necessary for frying
Lemon - 1

Method:

Firstly, grate the cabbage and then place this in a container.

Now add chopped onions,red chilli powder,cumin seeds,corriander leaves,curry leaves and salt in the same container and mix them all accordingly.

Now add besan,rice flour slowly till it becomes like a pakoda paste gradually.

Heat the oil in a frying pan aside.

Now take a tsp of paste each time and then put it in the boiled frying pan oil 5 0r 10 each time depending on the size of the pan.

Finally sprinkle the lemon on top of all the pakodasss and try eating with tomato ketchup...:-)

Cauliflower Kurma

Cauliflower Kurma:

Serves: 3
Preperation Time: 30 Minutes

Ingredients:

Chopped Onions - 1
Green Chillies - 4
Turmeric Powder - 1/4 tsp
Ginger Garlic Paste - 1 tsp
Chopped Cauliflower - 1/2
Red Chilli Powder - 1/2 tsp
Salt - 1/2 tsp
Fried Groundnuts - 4 tsp
Fried Poppy Seeds - 1 tsp
Shredded Coconut - 2 tsp
Cloves - 2
Cinnamon - 2
Water - necessary
Bay Leaf - 2
Oil - 5 tsp
Paneer - 1 dice

Method:

First fry the groundnuts in a pan for a minute and then add poppy seeds on it in high flame and then put it aside.

Now grind fried groundnuts,fried poppy seeds,cloves,cinnamon and shredded coconut with required water until it becomes like a liquid paste.

On the other end boil the water in another pan and then add chopped cauliflower to it until it becomes soft.Now drain the water completely from it.

Now heat the oil in another big pan for a minute and then add chopped onions,green chillies,turmeric powder and ginger garlic paste until onions turn to golden brown...

And then add drained boiled cauliflower to it and mix well.After a while,add Chilli powder,salt and also the grinded liquid paste to this and mix well for like 5 minutes.

Finally add a pinch of masala accordingly and then decorate it with Shredded Paneer on top of it.

******Start eating either with chapathi/rice/bread****** Enjoy:-)

Peanut Chutney

Peanut Chutney:
Serves: 3
Preperation Time: 15 Minutes
Ingredients:
Fried Groundnuts - quantity where you can hold in one hand
Green Chillies - 2
Cumin Seeds - 1/2 tsp
Garlic cloves- 2
Oil - 3 tsp
Water - as necessary
Salt - 1/4 tsp
Tamarind - very small size
Method:
Fry the groundnuts in a pan for 3 min in high flame and then put it aside.
Heat the oil in another pan for a while and then add Cumin seeds,Green chillies,Garlic cloves,
Tamarind,Fried groundnuts and salt accordingly for a while.
Finally grind all the above contents and add water to it until it becomes like a paste.
Now try this so called chutney either with idli,dosa or upma...This is one of the quickest way of preparing a chutney to almost many indian breakfasts...:-)

Chilli Mushroom Manchuriya

Chilli Mushroom Manchuriya:

Serves: 4
Preperation Time: 30 Minutes

Ingredients:
Mushrooms - 1 bag
Salt - 1 tsp
Chopped Onions - 1
Green Chillies - 4
Corrainder Leaves - few
Soy Sauce - 2 tsp
Tomato Ketchup - 2 tsp
Cilantro Stems - few
All purpose flour - 1 tsp
Corn flour - 1 tsp
Ajinomoto - 1/2 tsp
Baking powder - 1 tsp
Black pepper powder - 1/4 tsp
Cinnamon powder - 1/4 tsp
Water - on necessary to make a batter

Method:

First wash mushroom in salt water for few minutes and then drain the water completely.

Now add soy sauce to it and then mix well until the sauce dissolves completely into the mushroom.

On the side just grind few cilantro stems,green chillies and make a paste by adding ginger garlic paste to it.

Now heat the pan with oil and then add chopped onions and mix the paste to it.And then add 1 tsp of soy sauce and a tsp of tomato ketchup, mix well. Keep aside.

In another fry pan heat 2 tsp of oil and fry curry leaves and green chillies, keep aside.

Again take another container and then add all purpose flour, corn flour, salt, ajinomoto, soy sauce, baking powder, black pepper powder, cinnamon powder and sufficient water and make a batter.

Heat plenty of oil in a thick bottom pan, remove mushrooms from the soy sauce and dip in the batter one by one and drop in the oil and deep fry until golden brown.

Drain and remove from oil and place all the fried mushrooms in the fried ginger garlic masala and toss it well and add 2 tsp of hot and sweet sauce to it and mix well.

Sprinkle cilantro and decorate with fried curry leaves and green chillies. Its simply tooo goodd!!!

Green Beans Curry

Green Beans Curry:
Serves: 4
Preperation Time: 45 Minutes

Ingredients:

Chopped Green Beans - 1 bag
Chopped Onions - 1
Green Chillies - 5
Corrainder Leaves - few
Cumin Seeds - 1/2 tsp
Mustard - 1/2 tsp
Urad Dal - 1/2 tsp
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Chopped Tomatoes / Tomato Puree - 3 / 1 small cup
Shredded Coconut - 1 tsp
Salt -1/2 tsp

Method:

Initially boil the chopped green beans until it becomes soft completely using sufficient enough water and then drain the water from it and put it aside in a container.

Add oil in the pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

Add chopped tomatoes / Tomato Puree and mix until this melts and then add boiled chopped green beans to it.

Now add Salt,Daniya powder and Shredded Coconut to it and taste it till everything is perfectly enough...

Finally decorate the curry with corriander leaves...&&& then try it with chapathi / Rice...Its nicee !!!

Methi Tomato Curry

Methi Tomato Curry:
Serves: 3
Preperation Time: 30 Minutes

Ingredients:

Chopped Methi - 1 big
Chopped Onions - 1
Green Chillies - 5
Corrainder Leaves - few
Cumin Seeds - 1/2 tsp
Mustard - 1/2 tsp
Urad Dal - 1/2 tsp
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Chopped Tomatoes - 3
Shredded Coconut - 1 tsp
Salt -1/2 tsp

Method:

Add oil in the pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

Now add chopped Methi into it and fry for like 10 mins on high until it melts and then add chopped tomatoes to it and mix until this melts tooo...

Now add Salt,Daniya powder and Shredded Coconut to it and taste it till everything is perfectly enough...

Finally decorate the curry with corriander leaves...&&& then try it with chapathi...Its amazing !!!

Besan Gravy

Besan Gravy:
Serves: 3
Preperation Time: 35 Minutes

Ingredients:

Urad Dal - 1/2 tsp
Cumin Seeds - 1/2 tsp
Mustard Seeds - 1/2 tsp
Besan - 1/4 cup
Water - 2 cups
Salt - 1/2 tsp
Chopped Onions - 1
Green Chillies - 4
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Daniya Powder - 1/2 tsp
Oil - 4 tsp
Corriander Leaves - few for decoration

Method:

Add oil in the pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

In the meanwhile take another container and mix both Besan and water until it becomes thinner(watery) totally.And also add a pinch of salt to it.

Now add the watery mix to it, mix for a while and close the lid on low sim for 10 mins.

Finally add daniya powder and then decorate with corrainder leaves on the top.

This Besan gravy is the best one for Puri...Enjoy:-)

Beerakaya Curry:

Preperation Time: 30 Minutes

Ingredients:

Beerakayas - 4
Chopped Onions - 1
Green Chillies - 5
Corrainder Leaves - few
Cumin Seeds - 1/2 tsp
Mustard - 1/2 tsp
Urad Dal - 1/2 tsp
Turmeric Powder - 1/2 tsp
Ginger Garlic Paste - 1 tsp
Milk - 1/2 cup
Shredded Coconut - 1 tsp
Salt -1/2 tsp
Method:

Add oil in the pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it.

Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it.

Now add chopped Beerakayas into it and fry for like 5 min and then add milk to it.

While boiling the milk,add Chilli powder,Salt,Daniya powder and Shredded Coconut to it and taste it till everything is perfectly enough...

Finally decorate the curry with corriander leaves...&&& have fun with rice or chapati...Its really tastyyyy curry!!!

Rava Dosa

Rava Dosa:
Serves: 4
Preperation Time: 30 Minutes

Ingredients:

Rice flour – 1 cup
Maida - 1/2 cup
Sooji - 1/2 cup
Chopped Onions - 1
Chopped Green Chillies - 4
Salt - 1 tsp
Mustard Seeds - ½ tsp
Ginger Garlic Paste - 1 tsp
Curry leaves - 1
Coriander leaves - 1
Mint leaves - 1
Curd - 4 tsp
Oil - 3 tsp

Method:

First mix all the above contents in a bowl such as Rice flour,Maida,Sooji,Chopped Onions,Chopped Green Chillies,salt,Mustard Seeds,Ginger Garlic Paste,Curry leaves,Coriander leaves,Mint leaves and Curd.

Now add water to it and mix well until you feel like you can place a dosa on a pan.

Finally,heat the pan by rubbing oil to the entire pan and then sprinkle some water on top of the pan and have fun with the rava dosa!!!

Cabbage with Moong Dal

Cabbage with Moong Dal:
Serves: 6
Preparation Time: 45 Minutes Ingredients: Chopped Cabbage – 1/2 Moong Dal - 2 cups Chopped Onions - 1 Chopped Green Chillies - 7 Turmeric - 11/2 tsp Salt - 2 tsp Cumin Seeds - 1/2 tsp Urad Dal - ½ tsp Mustard Seeds - ½ tsp Ginger Garlic Paste - 1 tsp Curry leaves - 1 Corriander leaves - 1/4 Oil - 3 tsp Daniya Powder - 1 tsp Red Chilli Powder - 1 tsp Shredded Coconut - 1 tsp Method: First mix both chopped cabbage and moong dal in a container and then boil them until the moong is properly boiled. Drain the water completely from the container. Now add oil in the other pan and then make tadka or poppu by adding Cumin Seeds,Urad Dal and Mustard Seeds to it. Once these are boiled for a minute,add onions,green chillies,turmeric and ginger garlic paste to it. Now add the boiled chopped cabbage with moong dal in it. Add Chilli powder,Salt,Daniya powder and Shredded Coconut to it and taste it till everything is perfect enough... Finally decorate cabbage with moong dal receipe with corriander and curry leaves...ENJOY!!!

Spinach Dal


Spinach Dal:
Serves: 4
Preperation Time: 30 Minutes

Ingredients:

Chopped Spinach – 1 Bag
Chopped Tomatoes – 1
Toor Dal – 1 small cup
Chopped Onions - 1/2
Chopped Green Chillies - 7
Lemon sized Tamarind - small
Salt - 1/2 tsp
Cumin Seeds - 1/2 tsp
Urad Dal - ½ tsp
Mustard Seeds - ½ tsp
Ghee - 5 tsp
Curry leaves - 1
Corriander leaves - 1/4
Red chillies - 2
Chopped Garlic - 4

Method:

First pressure cooker Toor Dal, Chopped Spinach, Chopped Tomatoes, Chopped Onions, Chopped Green Chillies and Lemon sized Tamarind all together.

Add salt to it once its cooked well.

Now add ghee tadka(in hindi) which is even called poppu(in telugu) to it and mix well and have it with either rice or chapatti…{If you like to have with rice then make papad…which is really guddd combination}…

Finally, the procedure for tadka or poppu is as follows:

Initially, heat the pan by adding ghee for a minute and then add Cumin Seeds, Urad Dal, Mustard Seeds, Curry leaves, Chopped Garlic and Red chillies by mixing all together for another minute.

Sarvapindi

Sarvapindi

Serves: 2

Preperation Time: 20 Minutes

Ingredients:

Rice flour - 1 cup
Grated onion - 1
Ginger mashed - 4
Red chilli powder - 1 tsp
Channa Dal - 3 tsp
Salt - 1/2 tsp
oil - 10 tsp

Method:

Initially,soak the dal in water for 10-15 min.

Mix rice flour,grated onion,mashed garlic ,red chilli powder,salt and drained dal(make sure there is no water in it) like a chapati dough.

Divide the dough into pieces and roll them into balls.

Grease a frying pan with a little oil all over.

Take one of the balls of dough and flatten it all along the frying pan.

Make about 10 holes on the dough pan and spread oil all over the pan.

Finally fry the pan and enjoy with either ketchup or yogurt :-)

Boondi Curry

Boondi Curry:

Serves: 2
Preperation Time: 20 Minutes

Ingredients:

Oil - 3 tsp
Onions chopped - 1
Green chillies - 2
Curry leaves - 1
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/4 tsp
Tomotoes - 1/2
Boondi - 1 cup
Corriander leaves - 1/4
Daniya Powder - 1/4 tsp
Garam Masala - 1/4 tsp
Salt - 1/4 tsp
Red chilli powder - 1/4 tsp
Gratted panner - 1 small cube
Shredded coconut - 1/2 tsp
Cumin seeds - 1/4 tsp
Urad Dal - 1/4 tsp
Mustard seeds - 1/4 tsp
Red chillies - 1

Method:

Heat the oil in a pan for 3 minutes.

Add Cumin seeds,Urad dal,Mustard seeds,Red chillies,Curry leaves in the oil and then immediately in few seconds before it burns quickly add Onions and Green chillies till it becomes brown.

Add Ginger garlic paste as well as pinch of turmeric powder to it.

Add chopped Tomotoes and mix until it melts by closing the container for few minutes.

In the mean while,soak the boondi in water for a minute and then add to it.

Now add Corriander leaves,Daniya powder and Garam masala powder to it.

Finally, add gratted panner as well as Shredded coconut before turning off the stove for taste...

Curd Bonda

Curd Bonda:

Serves: 2

Preperation Time: 10 Minutes

Ingredients:

Curd - 6 tsp
Maida - 4 tsp
Sujji - 3 tsp
Onions chopped - 1/2
Green chillies chopped - 3
Cumin seeds - 1/2 tsp
Salt - 1/2 tsp
Oil - 3 cups
Curry leaves - 1
Corriander leaves - 1/4
Shredded cocunut - 1 tsp

Method:

Add curd,maida,sujji,chopped onions,chopped green chillies,curry leaves,corriander leaves,cumin seeds,shredded cocunut and salt in a container.

Put the above mixed container paste for 5 to 6 hours in fridge aside.

Now take a pan and heat the oil until it boils slowly and fry it accordingly...there u goooo*** to eat bonda!!!

Ingredients:

Spinach - 1 bag
Onions chopped - 2
Cumin seeds - 1/2 tsp
Green chillies - 3
Salt - 1/2 tsp
Ginger garlic paste - 1/2 tsp
Basin - 1 cup
Oil - 2 cups

Method:

Add spinach,chopped onions,green chillies,cumin seeds,ginger garlic paste and salt in one container and mix them all tills its watery.

Now add basin slowly till it becomes like a pakoda paste gradually.

Heat the oil in a frying pan aside.

Now take a tsp of paste each time and then put it in the boiled frying pan oil 5 0r 10 each time depending on the size eof the pan.

Thats it!!! Its the snack time now:-)*****HOT HOT PAKODA READY*****

Bottle gourd Curry

Bottle gourd Curry:
Serves: 4
Preperation Time: 30 Minutes

Ingredients:

Bottle gourd chopped - 1
Onions chopped - 1
Green chillies - 2

Tomotoes chopped - 1
Milk - 1 cup
Ginger garlic paste -1/2 tsp
Turmeric powder - 1/4 tsp
Shredded cocunut - 2 tsp
Dhania powder - 1/4 tsp
Salt - 1/4 tsp
Oil - 2 tsp
Red chillie powder - 1/4 tsp
Curry leaves - 6
Cumin seeds - 1/4 tsp
Coriander leaves - 6
Mustard - 1/4 tsp
Urad Dal - 1/4 tsp

Method:


Cut onions,green chillies,tomotoes and bottle gourd and put it aside.

Heat oil in a pan and then add urad dal,cumin seeds and mustard to it and then mix these for a minute and then add onions,green chillies and curry leaves to it.

Again after mixing all these for a minute add ginger garlic paste,turmeric powder and fry until its turns into brownish.

Now add chopped tomotoes to it until it melts and then add chopped bottle gourd and fry all these properly and then add milk to it.

After mixing for a while,now add pinch of salt as well as red chilli powder to it and then close the container till it becomes soft.

Now add shredded coconut,daniya powder,gratted panner and butter.

You can even add chilli powder for more spice and salt if necessary. And also add corriander leaves on top of it for taste and can eat this tasty curry either with rice or chapathi...:-)

  1. Tamarind - small lime size ball
  2. Bottle gourd chopped - 1o small peices
  3. Onions chopped - 1
  4. Green chillies - 2
  5. Water - 1 cup
  6. Tomotoes chopped - 1
  7. Ginger garlic paste -1/2 tsp
  8. Turmeric powder - 1/4 tsp
  9. Shredded cocunut - 2 tsp
  10. Sugar - 1/4 tsp
  11. Sambar powder - 1 tsp
  12. Dhania powder - 1/4 tsp
  13. Salt - 1/4 tsp
  14. Oil - 2 tsp
  15. Garlic chopped - 2
  16. Red chillie powder - 1/4 tsp
  17. Curry leaves - 6
  18. Cumin seeds - 1/4 tsp
  19. Asafoetida - 1/2 tsp
  20. Coriander leaves - 6
  21. Mustard - 1/4 tsp
  22. Urad Dal - 1/4 tsp

Method:

Extract the pulp of tamarind by soaking it in a cup of water.

Cut Bottle gourd,tomotoes,onions in to small peices and also cut green chillies vertically and then add all these to the extracted tamaraind water.

Now add Ginger garlic paste,Turmeric powder,Grated coconut,Pinch of sugar,Sambar powder,Daniya powder,and Salt and then heat these in a medium size pan by adding little more water in it.

Here you can even add Red chilli powder for more spice.

Boil all until the vegetables are completely soft.

Take a seperate pan in which add oil and heat it for a minute and then add Cumin seeds,Urad dal,Mustard,Chopped garlic pieces,Red chillies,Asafoetida and Coriander leaves to it.This procedure is called as tadka!!!

Finally add the tadka to the Rasam and mix well and then start eating this yummy rasam esp in the winter time:-)
